Grilled Salmon with Roasted Garlic Yogurt Sauce

Ingredients

  • For garlic mayonnaise
  • 8 large cloves garlic, unpeeled
  • 1 teaspoon olive oil
  • 6 ounces The Greek GodsĀ® Traditional Plain Greek-Style Yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoons Dijon mustard
  • 1 tablespoon fresh lemon juice
  • Salt
  • Freshly ground pepper
  • For salmon
  • 4 thick salmon steaks
  • Cooking oil
  • 3 tablespoons olive oil
  • 1/2 teaspoon crushed dried rosemary leaves
  • Lemon wedges, for garnish

Directions

  1. For garlic mayonnaise
  2. Place garlic, unpeeled, in a microwave dish with 1 teaspoon olive oil
  3. Microwave on high power 1 to 1 1/2 minutes until very soft; cool slightly.
  4. Squeeze garlic from skins into a small bowl.
  5. Using a fork mash the garlic until smooth.
  6. Add yogurt, mayonnaise, Dijon mustard, lemon juice, salt and freshly ground pepper, to taste.
  7. Stir together and blend well.
  8. Refrigerate.
  9. For salmon
  10. Brush grill rack with cooking oil.
  11. In a small bowl stir 3 tablespoons olive oil and 1/2 teaspoon crushed dried rosemary leaves.
  12. Brush over both sides of salmon steaks.
  13. Place fish on grill racks. Grill, uncovered, directly on medium-hot grill for 4 to 6 minutes, or, until fish flakes easily, turning once.
  14. Serve with roasted garlic yogurt sauce and additional lemon wedges, for garnish.

  • Garlic mayonnaise can be prepared in advance and stored in refrigerator for up three days for optimum flavor.
